cheddar chicken spirals:
1 1/2 C spiral pasta, cooked according to package
1/2 C mayo
1/3 C milk
1/2 tsp salt
1/2 tsp dried basil
2 C frozen mixed veggies, thawed
1 1/2 C cubed, cooked chicken
1 1/2 C shredded cheddar cheese, divided
mix mayo, milk, salt and basil in a large bowl.
stir in 1 c cheese.
add cooked chicken and veggies.
drain pasta, then stir it into the bowl.
transfer to greased 1 1/2 qt. microwave safe dish.
sprinkle with remaining cheese.
cover and microwave on high for 4-5 mins.
let stand 5 mins before serving.
thoughts:
I doubled almost everything in this recipe, using a whole box of pasta, 3 chicken breasts and 2 packages of frozen veggies. it was awesome. I will be making this again, many times.

So, every new recipe I think of lately involves pasta, it's hard to get around. Tonight I made one of Amanda's recipes, Ham and Cheese Calzone, and it was really yummy, like a stuffed pizza. I've used can soup and homemade soup and both are good. I'm not a huge lentil person but really liked this.
You could do this with tuna...... for a meatless friday. That is if you like tuna.. I think I'll try this one.
We eat so much pasta at our house. It's so cheap, but I cringe at the thought of 3 chicken breasts. Would a double recipe, feed my family of 7? How was the amount of chicken in it. I try to never use more than 2 unless we;re grilling or something like that. I'm just way too cheap.
Ohhh I have a recipe for a bacon, linguine and tomato pasta. . I'll need to read your bacon pasta below to see if it's similar.
Amanda, I think doubling it would feed your family, especially since you're all skinny. But you'll definitely want a side or two (applesauce and a salad? something like that.) This casserole was the only thing I served; Trav and I each had 2 helpings and there was still 2/3 of the pan left. And the amount of chicken was good, with all the pasta and veggies, and Trav is a big meat eater.

OK, I was really excited about my meal tonight and thought I'd share, especially since it was healthy, cheap, easy (and pretty!) We had corn on the cob, grilled chicken breast (which I pounded and marinated in 3 tbsp lemon juice, 1/3 c. olive oil and s&p), green bean salad (http://www.skinnytaste.com/2009/02/potato-and-green-bean-salad-325-pts.html) and sliced strawberries. The green bean salad was a nice change and made with ingredients found around the house.

I'm going to make this tomorrow night, love easy stuff like this and I'm sure my boys will love it! I had everything except for the chicken and pasta, ha!
